Description
Vin Santo is the delicious and lusciously sweet wine that is often referred to as “Holy Wine”. It is made from 100% trebbiano grapes and is usually consumed with biscotti but it also works beautifully with blue cheese or dark chocolates and nuts.
The grapes are hand picked in the late summer and then dried on special mats in specially ventilated drying rooms until the spring. As soon as the grapes have dried out they are pressed in the usual way before being racked into small oak casks for an extremely slow vinification which takes approximately four years.
This vin santo has the typical dried fruit aromas, it is rich, velvety and sweet. The high acidity keeps the wine very well balanced and stops it from being at all cloying.
