Tsuji Honten is a sake brewery located in Okayama, Japan and is ran by a brother and sister team. Their focus is on using ancient techniques that have kept the sake recipes as true to their rustic roots as possible. The results of this is sake that is rich, malty and creamy with zesty hints of citrus fruits.
The Mountain Stream is an unpasteurized (namazake) type of sake that is made using the ‘bodaimoto’ method which produces rich and rustic versions of sake giving an earthy and almost bitter flavour to the product. The namazake style lends the fresh and fruity flavours, yet thebodaimoto method creates an earthy complexity to the flavour. Think lychee, raspberry and rich honey with a sour kick.
