Tsuji Honten – Gozenshu ‘Underdog’

Description

The Tsujii Honten brewery is based in Katsuyama Town in Okayama, Japan. Founded. in 1804 but now run by brother and sister team Soichiro & Maiko Tsuji. So this seventh generation of brewers specialise in using heirloom omachi rice and an ancient, medieval brewing technique called Bodaimoto. This gives a balanced, rich and earthy Sake, full of umami flavours.

This would pair really well with curries, oily fish and charcuterie.
