Description
Podere Sassi is a small biologic holding situated in the southern Sabina in the region of Lazio, at the border with Umbria. Sassi family farm have planted 3 hectares of local vines 300mt above sea level. Their wine is made without any added yeast or temperature control, no added sulphites or filtration of any kind. In this area of the Sabina, the Ciliegiolo grape is the king.
Sassolini is a red wine by Podere Sassi Winery produced from Ciliegiolo 100%, maceration for 5 days on the skins and aging in fiberglass tanks for 8 months on the lees. No added yeast, no added sulphites.
