This Cabernet Sauvignon comes from the Paso Robles area of California, an area that is quickly building a reputation for Bordeaux varieties. The combination of warm temperatures, cool nights and gravelly well-draining soils heps Cabernet Sauvignon retain its naturally high acidity whilst ripening tannins, creating a smooth, balanced juice. It has been through extensive oak ageing, allowing maturity to develop through tertiary notes and gentle oak extraction. The flavours are deep and dark, ripe blackberry, sour black cherry, hints of sage and tomato leaf with a finish of decadant dark chocolate.
